Few names in caviar carry the weight of beluga. This hybrid crosses the beluga, Huso huso, with the small sterlet, Acipenser ruthenus, and it is farm-raised in Romania.
The pearls are medium-sized and a shimmering grey-black. The taste is creamy and briny, and the texture smooth. Save it for an occasion.
