To be plain about it, the paddlefish is not a true sturgeon, though its roe is served the same way. Ours comes from the American paddlefish, Polyodon spathula, wild-caught in U.S. rivers.
The pearls give a soft pop, and the taste is savory and briny. It makes an easy first caviar for a guest who hasn't tried one before.
Our blinis, crème fraîche and mother-of-pearl spoons are made to go alongside the caviar. They're sold as additions to a caviar order.
