This caviar comes from the white sturgeon, Acipenser transmontanus. Ours is farm-raised in Italy.
The pearls are generous, and the taste is creamy with a gentle brine. The finish is delicate, so it suits a guest who prefers a softer caviar.
Our blinis, crème fraîche and mother-of-pearl spoons are made to go alongside the caviar. They're sold as additions to a caviar order.
