Hackleback comes from the shovelnose sturgeon, Scaphirhynchus platorynchus. It is wild-caught in U.S. rivers, and supply is seasonal.
The pearls are small, black and glossy, with a firm pop. The taste is mild and clean, with a faint earthiness that sits well beside almost anything on the plate.
Our blinis, crème fraîche and mother-of-pearl spoons are made to go alongside the caviar. They're sold as additions to a caviar order.
