Germany's cold north gives this Osetra its character. It comes from the Russian sturgeon, Acipenser gueldenstaedtii, farm-raised in Germany.
The pearls are large and firm, steel-grey to brown. Expect a pronounced salinity and a clean, rich taste of hazelnut.
Our blinis, crème fraîche and mother-of-pearl spoons are made to go alongside the caviar. They're sold as additions to a caviar order.
