Royal is the lighter, bolder of our two white sturgeon grades. It comes from Acipenser transmontanus, farm-raised in California and Idaho.
The color runs from deep amber to dark gold. The taste is nutty, a little bolder than the Classic, with a creamy finish.
Our blinis, crème fraîche and mother-of-pearl spoons are made to go alongside the caviar. They're sold as additions to a caviar order.
